Who says it's too hard to eat healthy at lunch? Here is a very quick and easy recipe for some nice soup:

Maggi Instant Noodles (lowfat)

1 small bunch silverbeet, chopped

1/2 large carrot, sliced

Spices: coriander, cayenne or chili powder and turmeric

Handful roasted peanuts

All you do is make the soup as per directions. As it's cooking throw in the veggies, spices and serve topped with the peanuts. It's very quick, easy to prepare and you can easily keep these ingredients at your work and whip this up in no time! 

Approximate nutritional breakdown:

Carbs: 50g, Protein: 20g,  Fat: 15g (monounsaturated fat from the peanuts), Kcal: 415

For anyone who needs more food or is training for sport then add an Em's Power Cookie or Bar to this, or have as an afternoon snack with a piece of fruit and you will be POWERING for your PM workout!
